Waffles with Mushrooms & Maple Bacon
This recipe was developed by Amanda Maiorano (@madeby.mandy) using our mushrooms.
Ingredients:
150g self-raising flour
1 teaspoon baking powder
1 egg
240 ml milk
20g chives, finely chopped
2 tbsp olive oil
1/2 tsp salt
200g bacon
45g maple syrup
250g button mushrooms, sliced
Salt and pepper, to season
Method:
1) Preheat oven to 180°C and line a tray with baking paper. Remove some of the fat from your bacon and place on baking tray. Cook for 6 minutes, then remove from oven and brush maple syrup on top. Return to oven for an additional 10 minutes, or until golden.
2) Meanwhile, mix flour and baking powder in a large bowl. Add egg, milk and chives, then whisk well until a smooth batter forms. Add olive oil and 1/2 tsp of salt, then whisk again.
3) Grease your waffle iron with oil spray or olive oil, then spoon approximately 1/4 - 1/2 cup of batter and cook according to manufacturer's directions. Repeat with remaining batter.
4) Heat the remaining 1 tbsp of olive oil in a fry-pan over medium heat. Once hot, add mushrooms and sauté for 8-10 minutes, or until soft and tender. Season with salt and pepper.
5) Serve waffles with mushrooms, bacon and additional chopped chives. Enjoy!
