Ingredients:

1 bag Mackenzie's lentils, rinsed

500g white mushrooms, diced

2 carrots, diced

1 zucchini, diced

2 celery sticks, diced

250g baby spinach

4 potatoes, diced

1 broccolini bunch, diced

1 tin diced tomatoes

2 garlic cloves, finely chopped

¼ cup parsley, finely chopped

3 tbsp olive oil

1 red chilli, sliced

Salt to taste

8 cups water (or enough to cover the vegetables)

Method:

1. In a large pot, over a medium-high heat, add olive oil, garlic and chilli and fry until fragrant. Add in diced tomato and rinsed lentils. Mix to combine and add 2 cups of water.

2. Add in the diced mushrooms, carrots, zucchini, celery, potatoes, broccolini, baby spinach and parsley. Pour in the remaining water (add more if required).

3. Season with salt and allow it to cook for approximately 2-3hours (to thicken), the serve.
