Mushroom Panini
Ingredients:
Portobello Chips (refer to recipe here)
2 slices of bread, of your choice
2 bocconcini cheese, thickly sliced
Roasted capsicum
½ avocado, sliced
Butter
Olive oil
Salt and pepper to taste
Method:
1. Cook mushrooms according to Portobello Chip recipe.
2) Toast the slices of bread bread until golden. Spread a thin layer of butter on each piece.
4) Assemble the panini in order of: avocado, bocconcini, roasted capsicum and mushroom chips. Drizzle with olive oil and serve!
