MUSHROOM LARP (Vegan Spicy fresh and vegetarian fragrant Thai salad)

serves 8 as an entree
Ingredients
500g mushrooms (Swiss brown and white) cut into cubes
2 tablespoons vegetable oil
1 tsp chilli flakes
3 tablespoons fish sauce 1-2 limes, juiced (to taste)
½ red onion finely sliced
1 chilli, finely sliced
1/2 bunch mint leaves
1/2 bunch coriander leaves
1/2 bunch thai basil leaves picked
3 stalks lemongrass
2 spring onions
Garnish
Lime to garnish
Toasted rice to garnish
Fried rice paper or cassava crackers to serve
2 small cucumbers to serve
Lettuce cups to serve
Method
1. Heat the vegetable oil in a fry pan and add the mushrooms, then sautee for a few minutes.
2. Add the fish sauce, chilli flakes and lime juice. Combine the red onions , chilli, mint, coriander, Thai basil, lemongrass, and spring onions in a mixing bowl, then pour over the mushrooms.
3. Mix well then spoon into a serving bowl. Sprinkle with toasted ground rice and garnish with limes, cucumber, the crispy cassava crackers and lettuce cups.
