Ingredients

4 large Portobello mushrooms, stem removed

8 tbsp pizza sauce

1/2 cup mozzarella cheese

10 sliced cherry tomato

A handful of basil leaves

1/4 cup olives, pitted

1/2 Red capsicum, diced

Optional to also use salami, ham or any cold meat of choice.


Method

Gently cut the stem out of the mushroom and spray with olive oil, salt & pepper. Place into a baking tray.

Add the pizza sauce into the centre and top with the tomato, olives & red capsicum. Place into the oven to bake for 15 minutes.

Take them out of the oven and top them with basil and cheese. Place them back into the oven to bake for 10 minutes.

Top with fresh basil and enjoy!
