Ingredients:

300g Swiss brown mushrooms, grated and squeezed (removes any excess fluid)

400g chicken mince

6 spring onions, finely chopped

1 celery stick, finely diced

200g baby spinach

1 egg, beaten

2 cups panko breadcrumbs

¼ cup parsley, finely chopped

¼ cup Parmigiano-Reggiano cheese, grated

2 tbsp olive oil

Salt and pepper to taste


Method:

1. Combine mushrooms, chicken mince, spring onion, celery, spinach, egg, breadcrumbs, parsley and cheese into a bowl. Mix until well combined. Season with salt and pepper and mix again. Then, shape mixture into patties (the size of your palm) and place in fridge for 10 minutes.

2. Add olive oil in frying pan (enough for a shallow fry) over medium-high heat. Lightly fry patties for 5 minutes on each side or until cooked through. Serve with a side of Sweet Chilli sauce. Enjoy!
