This recipe was developed by Clinical Nutritionist Malissa Fedele (@malissafedele) for our 'Mushrooms Are Mush More Than You Think' campaign in February 2021.


Makes 8-10 burgers

INGREDIENTS:

1 large chicken breast

1 large Portobello mushroom

2-spring onion springs

1 red chili (optional)

2 cloves garlic

1 egg

2 tbsp. soy sauce

1 tsp. sesame oil

1-2 tbsp. coriander

(coconut, sesame or olive oil to fry)

Choice of fillings:

Burger Buns

Cos lettuce

Avocado

Tomato

Mayo


METHOD:

1. In a food processor add all of the chicken patty ingredients and process until well combined.

2. Using approximately ¼ cup of the mix, roll into balls and press down to form patties. Once all rolled, allow time to set in the fridge for approximately 20minutes.

3. Fry the patty in coconut oil in a fry pan over medium heat for approximately 3-5minutes on each side until completely cooked through.

4. Assemble burgers by adding in any desired burger fillings. Enjoy!
