This Italian-inspired recipe was developed by Clinical Nutritionist; Malissa Fedele using our Mushrooms! 

Ingredients:

250gm SA mushrooms, finely chopped

250gm minced beef  

2 eggs  

1/2 cup breadcrumbs  

1/4 cup parmesan cheese  

1-2 garlic cloves, crushed  

1 tbsp fresh parsley, chopped  

1 tbsp fresh basil, chopped 

1 tsp dried oregano  

Salt & pepper  

2 tbsp olive oil - for frying 

Optional: 250mL Italian Tomato Passata | Spaghetti (see packet for serving options)


Method:

1. Chop mushrooms up finely and add into a large mixing bowl. Add in all remaining ingredients and use hands to combine the mixture well.  

2. Heat the olive oil on a low/medium heat in a fry pan and gently fry off the meatballs turning occasionally for 5-6 minutes (or until golden & cooked through).  

3. If you are adding sauce, add the sauce and cover fry pan with a lid and allow to gently simmer for approximately 10 minutes. Enjoy with spaghetti or a side salad.
