Ingredients:

5 Portobello mushrooms, thickly sliced lengthwise

3 eggs

1/2 cup milk

1/4 cup parsley

1 1/2 cups panko crumbs

1 cup all-purpose flour

Olive oil, for frying

Salt and pepper to taste


Method:

1. In a medium bowl, whisk egg, milk and parsley. Then, in two separate bowls, add flour (in one) and panko crumbs (in the other).

2. Lightly salt mushroom slices. Next, coat mushrooms in flour, then dip in egg mixture, and coat in bread crumbs. Place on tray and repeat until all mushroom slices are coated.

3. In a fry pan on a medium-high heat, shallow fry mushroom schnitzels in olive oil until golden on both sides.

4. Serve with a side salad. Enjoy!
