Ingredients:

6 eggs

¼ cup of milk

½ cup of mozzarella cheese grated

½ cup cheddar cheese grated

1 onion finely sliced

300gm white mushrooms

3 tablespoons butter

2 cups baby spinach

1 tablespoon chopped parsley

Salt and pepper to taste

Method:

1) Preheat oven to 180°C, and butter a 20cm square baking dish. Set aside.

2) In a large bowl, combine eggs and milk and whisk until combined. Next, add cheese, and season with some salt and pepper. Whisk once again and set aside.

3) Over a medium-high heat, in a large non-stick pan, add butter, brown onion and mushrooms and sauté until mushrooms soften. Season with salt and pepper. Add spinach and continue to cook for another 2 minutes stirring constantly. Remove from heat and set aside for 5 minutes to cool.

4) Pour mushroom mixture into egg mixture and stir well. Pour immediately into the buttered baking dish and sprinkle chopped parsley on top. Bake in the oven about 25 minutes or until lightly browned and puffed. Remove from oven and serve with a green mixed salad.
