This recipe was developed by Amanda Maiorano (@madeby.mandy) for our 'Mushrooms Are So Mush More Than You Think' Campaign in February 2021.


Serves 2 | Dairy Free, Egg Free, Nut Free, Gluten Free Option | Under 30 minutes

INGREDIENTS:

Burgers

2 portobello mushrooms

1.5 tbsp olive oil

1 tbsp balsamic vinegar

2 tsp tamari or soy sauce

1 clove garlic, minced

Pepper, to season

To Serve

2 hamburger buns (gluten free, if required)

1 tomato, sliced

1/2 red onion, sliced into rings

Lettuce

Other: beetroot, ketchup, aioli


METHOD:

1. Preheat oven to 200°C and prepare mushrooms by removing the thin top layer of skin.

2. Place mushrooms in a small baking dish, add olive oil, balsamic vinegar, tamari (or soy sauce), minced garlic, and a few cracks of pepper. Gently massage marinade into mushrooms, ensuring all parts are coated. Place baking dish in oven and cook for 15-20 minutes, until tender, remembering to turn them over at the halfway point.

3. Meanwhile, slice burger buns in half and prepare the fillings.

4. Once mushrooms are cooked, remove from oven and let cool on a wire rack for 5 minutes before assembling the burgers. Enjoy!


Note: Feel free to add your choice of fillings and sauces to the burgers
